Salted Caramels
We make the caramel with sourwood honey that we actually go on road trips to find. We balance that with our own Tahitian vanilla extract as well as lots of butter and sea salt. Dipped in 65% cacao chocolate, each one is sprinkled with a pinch of Fleur de Sel.
Classic Truffles
The chocolate in these truffles is pure Madagascar cacao, which is the Merlot of cacao: intense, acidic and with a strong hint of raspberry or dark currant. We make our own vanilla extracts, and the one we use in this is cognac-based which adds a nice smokey character. Take a bite of the truffle and while it starts to melt on your tongue, take a sip of your favorite red wine...
Espresso Truffles
These truffles are made with Occumare cacao from Venezuela. We have a custom blend of coffee beans which we grind up and brew directly in the cream for the filling. This recipe originally was meant to please folks who like their coffee extra crunchy, but these truffles are a huge hit with almost everyone who tries them.Breezies
We roast and grind the best hazelnuts we can find, then blend them with our own chocolate and our own vanilla sugar. The result is a sinfully rich nutty filling covered with exquisite chocolate.
